DELICIOUS NM TAMALE PIE

INGREDIENTS

1 can of tomato sauce (12-15 ounces)

2 tsp chili powder 

1/2 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp salt

3 cups cooked pulled pork (choose local!)

1/2 cup freshly ground masa harina (cornmeal)

1/2 cup flour

2 tsp baking powder

1 egg

1/2 cup milk

DIRECTIONS​

Preheat oven to 425F. Coat inside of a 2 quart saucepan or baking dish with olive oil.  In a small bowl, mix tomato sauce, chili powder, cumin, garlic powder and salt. Place port in your dish of choice (see above) and top with tomato sauce mixture.

In a medium bowl, stir together masa harina, flour, baking powder, egg and milk. Pour batter evenly over pork. Bake at 20-25 min. Masa will be toasty and bronzed.

Serve with a dollup of sour cream, freshly sliced avocado, shredded cheese, sliced black olives and Spanish rice.
